I was recently selected to take part in creating a recipe for a new line of sauces that Progresso recently launched. My assignment? Something quick to prepare.. as in 20 minutes or less. They must have known that I would have some busy afternoons and evenings ahead of me…because there were quite a few 20 minute meals birthed from this sauce. bruschetta

This is a great substitute for salad if you’re short on lettuce. My husband is always asking me to make it. Here’s how: take a bunch of fresh basil, roughly chopped 1 med ripe tomato (diced) 1/4-1/2 cup mozzarella cheese (diced) 2tbs good quality olive oil (no substitutions) 2 tbs Italian seasoning 1 tsp KOSHER salt (reg salt? ok, but not as good with this) If you have a salt grinder, that’s excellent.
