Imperial rice~ creamy comfort food
This is one of my favorite dishes. On occasion, my Cuban neighbor will bring me some… and I graciously thank her and run to my kitchen to devour it. Of course I have begged her for the recipe, but she says she doesn’t use one. That’s the secret, folks. Don’t use a recipe. Except with baking. tater tot casserole~ because tater tots rock.
Tater tots are one of those foods that….well, they just rock. Now, I know they aren’t one of the world’s healthiest foods, but every once in awhile, it’s nice to have some good old tots.
My husband loves having a hash brown casserole every Sunday for “soul food Sunday”. To be honest, I am sooooo tired of the hash brown casserole. So…. I invented something with a different frozen potato product.

Hawaiian poke: a recipe my sweet hubby found for me.
My hubby hangs out a lot on what I call “fish book”. It’s like facebook but, for fishermen. He loathes facebook…but fishbook is justified since it’s “useful information” as he says.
I have to agree, because this recipe is very useful. It’s the answer to my sushi craving without having to make rice. It’s got the spicy sesame kick that I simply adore… and, since it’s made with previously frozen fish, just about anyone can make it.

baby lime coconut tarts~ bite sized miniature key lime pies spiked with coconut
I know, this is more of a summery dessert, and here we are in the midst of Fall, complete with candy corn and pumpkin. But, I also know that not everyone is “into” the spicy sweetness of Fall. Some of y’all may be longing for the tart and cool flavors that only coconut and lime can give you.
And, maybe… some of y’all are in Florida with me- complete with the record high temperatures above 90. Where ever you are… it doesn’t matter. These are good in any season.

Ooo… this is the perfect casserole to make on Sunday morning, and then warm it up and feed the kids and husband in the morning during the week. That way, you have more time to tweet and facebook. whoops, I mean, vacuum and do laundry. Or decide what you’re going to wear..some days, I loathe deciding what to wear.
Those are my purple dress days.
