taco loaf

This was one of those meals I wish I found years ago… it’s OMG good. I found it yesterday when I was in one of those “moods” – you know the ones… when nothing sounds good to have for dinner…. not even take-out? Kids suggested tacos, hubby suggested meatloaf…. myself suggested “ehhh…” So, I did what I had to do. I went onto All Recipes for inspiration. What did I find? About a zillion meatball and meatloaf recipes. Still I was “ehhh..” So I headed over to Coleen’s Recipes and found this GEM. It’s a keeper. Trust me.

I added a couple extra things to my version- marked with an asterisk *

1 lb ground beef

1 egg

1/2 -(3/4*) c crushed tortilla chips

2 tsp chili powder

1/2 (3/4)*tsp cumin

1/2 c chunky salsa

1/2 (3/4)*tsp pepper

1/2 c shredded cheese

4oz diced green chiles*

1/2 tsp garlic powder*

combine and form into a loaf shape, place on foil lined baking sheet.

Spread on top:

3/4 c refried beans mixed with 1/4 c salsa

Bake at 375°F for 40 minutes, top with 1c shredded cheese and bake 5 more minutes. :) MMMMM!

  • my boys love this sorta stuff :) and i totally get u about the “ehhh” moments i get them often! specially lately! Altho i have found my cooking bug again thank goodness!

    Tried this one out last night after looking at it on your page for a few days. LOVED IT and so did my hubby and boys! In fact they devoured and it was the first thing to go on leftover night tonight. So thank you!! Just wanted to add that I used your tweaks and added a couple of my own: added a can of sliced olives, moved the refried beans and sauce mix to the bottom and added a bisquick topping to it for a crust (added the shredded cheese after of course =)). Definitely gonna be added the dinner rotation!
