These are a little more nutritious than the standard with white potatoes, I don’t think y’all need the lecture on the tons of beta carotene and antioxidants in em…. you guys are smart, you know that!
The original recipe came from one of my favorite cookbooks; “The Black Family Reunion Cookbook” yes, I know it’s not a politically-correct title… but I didn’t do that part. It is chock full of yummy things, and there are some things in there I’m not too sure I want to try (pigs’ feet, anyone?) Most of the recipes call for TONS of butter-flavored Crisco- I tend to alter that part. Anyway, here’s my adaptation of the sweet potato pancakes found in there:
Shred 2 medium sweet potatoes, sprinkle with a bit of kosher salt and set aside.
meanwhile- get together 1/3 c finely chopped onions. Drain away any liquid from potatoes. Now, add the onions, 2 eggs , 1 tbs milk, 1/3 c flour. Spoon onto a hot nonstick skillet that has a we bit of oil in it. (maybe 3 tbs) Cook about 3 -4 minutes each side, or until golden crisp. These have a yummy sweet-savory flavor that’s highly addictive! Enjoy!

Wow, these pancakes look great. And so does that vanilla chiffon cake. I’m bookmarking this site. Thank you.
Yea! Jenny found you! Those pancakes do look good. I like the potato ones so I’ll have to remember to give these a try!
I love sweet potatoes in every shape and form.. Never thoughts of making pancakes out of them though… Looks easy & yummy.. Have to give this recipe a try for sure! Thank you for sharing! =)
Michelle, I am dying to know what the white stuff is on the plate. Sour cream? I am going to make these for my sweet husband this weekend. Do you mind if I put this on my site too? I will credit you my sweet foodie friend. PS I have to call you tomorrow morning!!
Are you supposed to boil the potatoes? It says drain liquid from potatoes??
Just raw potatoes- when you sprinkle the salt, it will draw out some liquid!
Just raw potatoes- some liquid will seep out from the salt being added to them.
