Remember mother’s day? When we all picked strawberries? Yep, that was fun. Wanna know what I did with the strawberries?

a photo with a little bowl of them. Okay… this is what I really did with them….

to make this you need strawberries and about 20-30 minutes. Yep- that includes baking and doing dishes time. Unless you have a dishwasher. I have a dishwasher- it’s just of the human variety. They don’t break as much.
This is the same recipe as my muffins here- it’s just made into a loaf pan. But, I will give it to ya again.
In a bowl, mix:
1 1/2 c flour
3/4 c sugar
1/2 tsp salt
2 tsp baking powder
Stir that with a fork. If you like, you can keep this mixture in a zip top bag- that way you always have muffin/bread mix.
Now- in a 1cup measuring cup:
1/3 c oil
2 tsp vanilla
1 egg
now add milk to the 1c mark.
Add 1/3 c coarsely chopped strawberries, and combine the wet and dry ingredients.
Pour into a prepared loaf pan.
Once cool, drizzle with 2 tps cream mixed with 1 c powdered sugar.

Optional: any fruit can be used. You can also throw in some nuts.
Now- today my plan is to make these spinach balls…. I wanted to do em yesterday but there was an electrician was here all day. Now our ceiling fans work. Which is a big deal- remember last summer? We wanted to see how long we could go without turning on the A/C? Yep. We are at it once more. It’s been nice lately. I haven’t even cracked a sweat- except in the garden. But you’re supposed to sweat there. Anyway, have a wonderful day…. I gotta get the big one to school and then hang laundry. I am soooo old school….. out of necessity.

That looks really good. Your strawberries look great, they seem to have a nice natural flavor.
I think we can live about 120 years without any air-conditioning. I have to, as I am allergic to it.
My trick is to start the day with a short and very intense work-out, so I sweat a lot, I feel really hot during those few minutes, and after I take my shower I feel well all day even if it’s extremely hot and humid.
This looks really good, I will definitely have to give this a try!

oh my oh my……this LOOKS delish! I have spent most the day avoiding food even took a trip to sams and they were sampling all sorts of goodies…and i ran the opposite direction…lol…BUT boy this i think i could handle mmmmmmm i cant wait for my berries to ripen im goin to have hundreds this year! Definitely goin to give this a go darl!

I followed the recipe to a T and it did not turn out at all. It was not cooking in the centre so I let it cook for double the time and it still came out gooey in the centre!
Oh no, I’m so sorry to hear that~ I will re-make the recipe myself to make sure there isn’t any typos. Was the oven preheated?
I’ve made this recipe several times….love the flavor and simplicity but it has NEVER been close to done in 20 minutes. I always assumed that was an accidental carry-over from the original muffin recipe (muffins are usually done around 20 min but quick breads are closer to 40-50 mins.) Anyway, I just keep it in the oven but somewhere around 50 mins it’s so brown I have to take it out even though it’s a bit raw in the middle (if cooking in 8×4 loaf pan.) Loads of icing makes it look more appetizing (can’t we say that about most anything?) But now, after seeing michelle’s post, I’m curious if you have any ideas about what I’m doing wrong. ; ) Thanks!

I did have the time wrong, and I adjusted it (whoops!) It may seem “raw” in the center from the strawberries that get gooey when cooked~ me, personally I like a little gooey-ness.
