These are my spinach stuffed chicken breasts… It’s not an exact recipe, but I will tell ya how I make them:
appx 1cup thawed and draines frozen chopped spinach
1tsp or so kosher salt
1 egg
1/2 c bread crumbs
1/2 c shreddded cheese
garlic, pepper, basil, any other seasonings ya like..
mix everything in a bowl, stuff into chicken breasts that have been cut so there’s a nice pocket. (kinda like a pita)
wrap it with cotton kitchen twine. Bake at 350 for 35-40 min, or until chicken is cooked through. Depends on how thick the breasts are, ya know! enjoy! (I serve mine with brown rice…)

I cooked this particular one for first time ever when we were expecting company, and what a marvelous dish! It was a smashing success.
