spinach balls

These are addicting- and not that bad for you, either. Yay! Should I mention easy, too?

Yep. But, first I need to tell to about this:

That there is 2 quarts up smashed up strawberries.  What happens when you add lemon juice and pectin and 7 cups of sugar? A boil over. I now need to go buy a razor knife to scrape the burnt jam off my stovetop. Ugh! But….you know what I also need to buy? A nice big pot. Pot shopping is fun. Cookware, that is.

As y’all know I will most likely hit up the Goodwill that’s near Palm Beach. Yep- I have found GOOD stuff there…really Le Creuset. Ooolala. If I don’t have luck there- it’s off to Ross/Target/etc. I’m a bargain girl.  😉

The jam? I still came out. Just two jars short.

I should have taken pics of the spill. But, burning sugar and smoke and a lot of “OH S#*T” didn’t go well with, “Wait! Lemme get my camera!” I’m sure y’all can see the picture. Add to that my daughter woke up early (WAY early) from her nap, and she was upset saying, “Get me mommy-pine cone!” Yes- I am a “mommy-pine-cone”. I had no clue humans could birth pine cones. But, one day she just started calling me mommy-pine-cone. When my hubby and I asked her what a pine cone is, she replied “It’s something that you hug.” So, I am just fine being a mommy pine cone.

Back to spinach balls. Now, you guys see I do a lot with Foodbuzz. I like them. It’s like a facebook for foodies. A while back, I receieved some all-bran cereal trough the taste-maker program. I made the oatmeal creme pies with some and these with some more.

Take 1 bag thawed, drained spinach

add 3/4 c All Bran Bran Buds

3/4 c shredded cheese

1/3 c chopped onion

1 egg

1 tsp salt

1/2 tsp pepper

1/4 tsp garlic powder

1 box stuffing mix (prepared and cooled to room temperature)

That’s what the bran buds look like…

and here’s it all mixed together!

Now put it in the fridge for 45-60 minutes.

Roll into balls and place on a baking sheet. (Parchment lined is best)

Bake at 350°F for 20-30 minutes, or until they feel dry on the outside.

I served mine with a mustard dipping sauce.

2 TBS mayo

1 TBS dijon mustard

1 TBS ranch

These are also a yummy sandwich filling. Place in a whole wheat pita with sweet onions and lettuce. Eat and enjoy!
