Which, made me start thinking of all of the “good ol” recipes that I have never done…brownies, apple pie, ice cream…you know good ol’ food. Man, I am craving brownies now. Why’d I have to type that?
I know it’s summer, but pot roast is actually a good summer food- especially when you use a crock pot~ no heating up the house-woohoo!
I’m sure you know this, but you do get a much richer flavor if you brown the meat beforehand:
I did mine up with carrots and onions… because I was out of celery and I wanted potatoes on the side.
There it is all cozy in ti’s veggie bed.
Pour a herbed broth over it, and turn your pot on…. dinner is done! Yum!

- 1 tsp thyme
- 2 tsp parsley
- 2 tsp salt
- 1 tsp pepper
- 1/2 tsp garlic
- 1 tsp oregano
- 1 1/2 c beef consume or broth
- 1 tsp cornstarch, dissolved in 1 tbs cold water
- 1/2 large onion, sliced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 chuck roast, browned on outside
- Sprinkle meat on all sides and brown in a pan over med-high heat
- Place in a crock pot, add veggies.
- Mix broth and seasoning, pour over meat.
- Add cornstarch mixture.
- Cook on high 5 hrs or low 8 hrs.















That sure looks yummy!! My daughter and I will be moving back to GA in a couple weeks and will have to be using alternate ways of cooking at first so any crockpot recipes will be greatly appreciated. Love, love, love you and your blog

This is a wonderfully easy way to fix a pot roast and looks virtually fool-proof (with myself being the fool). Anyway, when it comes to the spices, i.e., parsley, thyme, and oregano) do you use fresh spices or are the dried spices alright to use? Love your blog.
Looks good, I always do my pot roast in a Crockpot, but I’ve never browned the meat first before. I’ve heard of it and seen it done on cooking shows, but never really tried it myself. I’m gonna have to try browning it first next time and see how the flavor changes. Thanks for the recipe.
