lemon tarragon salmon patties~healthy low fat, low carb and tasty!

I made these yesterday for my official entry into the Saucy Mama Kinny Mama recipe contest. There will be a public voting portion; so please bear with me the next few days as I narcissistically pimp myself out.I’ll do my best to keep it subtle.

I made a bunch of theses & now I have my freezer stocked with quick and healthy meals. Woo~hoo to that. It’s also brain food with all the good EFAs in there, so not only will I feel healthier when I eat them, I’ll get smarter, too. ;)

These are as easy as meat loaf to make, also. The patties are made by gently pulsing- wait is there such thing as a gentle pulse in a FOOD PROCESSOR?

Let me re=phrase: A quick pulse in the food processor, add a egg , then stir in your mustard and seasonings. There aren’t too many seasonings because the lemon tarragon mustard does that job. I made a little sauce to go along with it that has the same mustard, and it’s mixed with yogurt. You can use Greek or American yogurt; it just depends on your preference for thickness.

So, this is my official entry. Do you like it? I know you’re probably wondering the prize, right? It’s a $500 cash prize and a $500 Spa Finder gift certificate.

I’ll be honest: I’m not a “spa” person. My idea of a mud treatment involves gardening and my idea of foot exfoliation involves running barefoot on the beach. But, hey… I’m open to trying new things. Heck, maybe I’ll spend the $500 on some tiny dog that can wear bows in her hair and then I’ll have a spa day with Foo-Foo.

Nah, I have other plans for that $500 if I win it, involving a portion of tuition.

So, the deadline is today… which happens to be my birthday (yay me!) maybe that’s a good sign. ;)

Serves: 4
Ingredients
  • 1 pound salmon, cut into 1 inch chunks & patted dry
  • 2 tablespoons Saucy Mama lemon-tarragon mustard
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon parsley
  • 1 teaspoon chives
  • For the sauce:
  • 1/4 cup plain yogurt (either Greek or American)
  • 4 tablespoons Saucy Mama Lemon Tarragon mustard
Instructions
  1. Place the salmon in a food processor, and pulse just enough to break up
  2. add the egg and pulse once more
  3. stir in the seasonings and mustard
  4. Shape into patties and cook on a well greased (or non stick) grill pan for 3 minutes the first side, and 1-2 minutes the second.
  5. Serve with yogurt mustard sauce and a nice salad.

    i am very interested in the mustard… i love the combination of tarragon and mustard with salmon! I usually cook my salmon as steaks, and fear pulsing a perfect piece to make a patty, but this recipe is tempting!!
