french dijon chicken

Sorry I didn’t post yesterday…I will have to post something twice today.

I just got plain old busy. That’s all there is to say.ย  We all have those days….I went from dropping my hubby downtown for jury duty, to a bike ride, to the store, to preschool story time at the library, to going back downtown, then to hubby’s work, then home, then out to lunch with hubby, then the beach, gas station, Walgreens, came home-cleaned the house while hubby vacuumed the cars and the we went on a walk and had grilled chicken salads for dinner. Just one ofย  those busy days….

I also smoked some fish. For fish dip. That will be a later post. ๐Ÿ™‚

Today…is easy dinner day!

The name sounds fancy-but it’s simple.

And it’s really good.

All you do is take 4 chicken breasts, season with salt and pepper, and a dash of garlic and thyme. (or rosemary)

Saute in butter until golden and cooked through.

Set aside in an oven proof dish.

Deglaze the pan with 1/2 c chicken broth and 1/2 c dry white wine, add 1 tbs flour and stir over med heat until the sauce thickens.

Add 1 cup half and half (or milk) and 2 tbs Dijon mustard.

Stir until thickened and pour over the chicken, sprinkle with chives.

As you can see- I served mine with potatoes and broccoli, (My hubby likes extra cheese sauce on the greens.)

Personally, I like it with egg noodles or rice. That sauce is good.

This whole meal takes about 30 minutes to make. Don’t you love that? And there is no chopping! Sometimes I am just not in the mood to chop.

If you like to chop, caramelized onions go great with this.
