I love coconut. If you don’t- you can omit it from this recipe, and you have a basic sweet breakfast bread. Coconut is one of those things I hated as a kid, but once I turned 14, I developed a crush on it that never went away. Sometimes that happens with food, it’s a lot like relationships…. things you love as a kid, somehow don’t do it for you as an adult. Or, things you loathed as a kid, you love as an adult. Personally, I used to love bubble gum. Nowadays, just looking at it makes my jaw hurt. When I was younger, a Mazda Miata was my “dream” car, nowadays…. an unlimited Uber would be my dream, of course my dream Uber would also load all the kids into carseats, load up the stroller, unload the stroller and groceries, and the kids. Heck, I may even bribe him to pit away my groceries. Ahhhh… Uber with benefits.
That’s the next “thing” that need to come out. Driver services that cater to busy moms with several kids.
That’s my idea for the day.
Back to bread: I had the opportunity to try Red Star Platinum yeast in this recipe: My oh my did it preform wonderfully….
I used my bread machine’s dough cycle for this recipe. So, it’s sort of homemade. Mama don’t have time to knead that dough!
I highly recommend owning a bread machine. Its great for pizza crusts, cinnamon rolls, and oddly shaped fresh baked bread. That’s the main reason I use my machine, just the dough cycle. Because when you bake bread in them you end up with an odd shaped bread. I don’t like odd shaped bread.They ought to just make dough machines…
- 2 eggs
- ¼ cup plus 2 TBS water
- ¼ cup sour cream
- ¼ cup butter
- ¼ cup granulated sugar
- 3 cups bread flour
- ½ cup sweetened shredded coconut
- 2 and ¼ tsp yeast
- Have all ingredients at room temperature.
- Place in bread machine in the order listed.
- Using dough cycle, once cycle is complete shape into loaf shape, allow to rise covered 45 minutes
- Preheat oven to 375F
- Brush top of loaf with beaten egg, and sprinkle with shredded coconut
- Bake 24-30 minutes
- For the glaze:
- Beat 2 tbs butter
- /4 cup milk
- cup powdered sugar
- tsp lime zest
- Pour over cooled bread
