chewy oatmeal raisin cookies

After finishing off the vanilla chiffon cake, I realized something: my hubby’s favorite desserts are 2 things: 1) homemade 2) don’t require an eating utensil. Funny, huh? So I made him his favorite cookies.

Chewy Oatmeal Cookies:

1 stick salted butter (softened)

1/2 c brown sugar

1/2 c white sugar

3/4 tsp vanilla

combine the above ingredients until creamy. Then add:

1 egg, mix well.

shift together 3/4 c flour, 1/2 tsp baking soda, 1/4 tsp salt, 2 c oats and 1 c raisins

mix well and drop by spoonfuls onto a baking sheet. Bake at 375 for 6-9 min. Enjoy!
