I made a pasta salad over the weekend. And, a seaside cake. But, since my last post was cake.. I thought I’d give you a break on cake. See how much I love y’all?!
Speaking of cake, I may attempt some of those cake pops later… we’ll see. I have a lot of leftover cake from leveling. Since we’re on the topic of sweets, let me tell you about my dream last night. Since I remember it right now, I probably won’t remember it in an hour.
I was making a dessert for a contest of some sort… it was coconut, pralines and evaporated milk…baked up in a casserole. Seriously, I don’t know what on earth I was thinking…err dreaming when I made that last night in dreamland.
But, my old boss’s mother in law liked it. Yeah, weird dream.

There is another name for this, Swisstacular Spinach Bake. But, I like the word cheesy better. And, the other title makes me think it’s all Swiss-y and actually, there’s other cheese in there, too.It calls for 5oz of shredded Swiss cheese, but it’s actually a blend of Swiss and Gruyere.
Speaking of names, I still need to think of a name for those tuna balls. Tuna nuggets? Hmmm.
Anyway, I hope y’all had a nice long weekend. I was lucky enough to go to Ikea and sleep past 5:30am, so life was good for me. Oooo- I also bought a big ol’ thing of honey. Yep,highlight of the weekend-foodwise.
Now- spinach is a strange thing… most female adults like it. Most male adults don’t. So weird, I am starting to think Popeye was a transvestite.

I realized a few things recently: one- the tortellini recipe I posted- the filling made waaaay to much, so here it is, resurfacing like an ugly sweater from your eccentric aunt. Not that I have an eccentric aunt. As a matter of fact, I think I am the eccentric aunt. Oh dear. Well, maybe not; people really do like mosaic glass boxes, don’t they? I do. I don’t give sweaters, but I am known to give containers. Containers are nice. They always look better than a pile of stuff, don’t you think?
I also realize it’s been a while since I’ve bored you with the goings on… oh wait- that’s what The Domestic Mama is about. Well, I need to get busy there because I am in the middle of preparing to paint the kitchen and maybe bedroom. Then there’s rearranging. I get bored and like to move things around. Before and after pictures are fun of that.
Now, before you go thinking I’m totally clueless and heartless about what’s going on in the world and the weather… I’m not. I just know it’s sometimes nice to not think of something so sad on occasion. Seriously, the news last night had me bawling like a 2 year old with a skinned knee. A girl’s husband died laying on top of her, protecting her. I was very tearful, so was my hubby, but don’t tell him I told you.
With all respect, my prayers and blessings are with the people impacted by all the recent tragedy, around the world. I can only hope things like this bring humanity to surface in such a way that it is not forgotten, even after the storm has passed and towns are rebuilt. I know I was changed after the hurricanes of 2004…and as much as I hated the situation, I am aware it did something for me, and I am happy about that.

Tortellini disaster, yes. The whole process of the pasta making went smooth, even with my 3 year old in her new “no nap today!” schedule. Okay, maybe disaster is a strong word. How about screw up?
I was on the ball. I made a tray of tortellini in under an hour.
I had a jar of my homemade sauce ready.
