I have been having a hard time deciding on dinner lately… my mind has been on bigger things. Our mortgage, bills, my car, and raising awareness for problems that exist here in our country.
One in particular is childhood hunger, and there is a campaign going on right now with Share Our Strength and Yahoo. Basically, Yahoo has committed to donate $20,000 to Share Our Strength-a national nonprofit working to end childhood hunger in America. The organization has ambitious goals and is working creatively to meet them, making sure that children don’t just have enough to eat, but that they are getting the nutrition they need to learn, grow and thrive.

Anyway, my mom brought over a bag of these unknown peppers that were grown in the back yard of a Jamaican lady from her church, at first I thought they were mild- but they ended up having quite a kick. Needless to say, my contacts stayed in a bit longer that evening…

I really wanted to post this earlier, but when I sat down to write type it… I just couldn’t feel it. Hmmm… Weird, huh? That’s not like me. It may have been the fact that I have had company in town, my car broke down, my 3yr old almost killed an 8 year old, and I’ve been in love….

Well, this is what I ate last night. Chicken fajitas with a green chile cheese sauce that I whipped up on a whim. It’s a good thing I noted what I made the sauce with- because now y’all can make it, too.
I ended up making fajitas because I got a coupon for some free Tyson grilled and ready chicken. And, there was no way we were going to grill our own chicken since it was rainy. Grilling in the rain is lame.
Anyway, dinner ended up taking 10 minutes to make. Take that- 20 minute meal people! But, let’s face it: there is no true 20 or 10 minute meal. It’s the whole clean up process. Nobody factors in cleaning up the meal.
Wait- is PB&J a meal? Maybe. I stand corrected.
