cherry-almond biscotti and other hard things in life

cherry almond biscotti

Spell check does not like the word biscotti. It underlines it for me, in its bright red zig zag pattern, mocking my confidence in cookies. Like the  mother in law that still remembers the times you did not hold to her standards, spell check is there: saying “that is wrong”. Well, spellcheck, it’s right.   Biscotti. The cookie that feels so wrong as you make it. I mean, really: it goes against every typical cookie recipe, because you bake it, slice it and then bake it again… to the point where it’s a cookie rock. But that’s what your coffee […]

almond vanilla chip cookies

It’s been awhile. You deserve cookies. I am peering out from under my rock, finally getting back into the comfort of routine. As much as people complain about the staleness of routines, I embrace the comfort of the mundane, the blandness of the everyday norm. But, just because it’s the everyday, run of the mill routine; it doesn’t mean that it can’t be filled with sweetness and sprinkles. Or, vanilla chips and almond in this case. Sure, I like a little spice in my life. But, only in my food life- thank you. What’s a food life? Oh….. Another phrase […]

Carrot cake whoopie pies

It’s   officially spring …but it has felt more like summer in my area. 86 degrees with high humidity = bad hair and craving springtime treats. Of course, when I think of spring, I think of bunnies, and when I think of bunnies, I think of carrots and when I think of carrots I think of carrot cake…. oooo. Whoopie. Hence: Carrot Cake Whoopie PIes   And, there are carrots in there. So you can totally call it healthy, right? Okay, maybe not “healthy” but healthier than a non carrot whoopie pie. The best part is how crazy easy these […]

lemon pastry cremes girl scout cookies

lemon pastry cremes~ (n) My favorite girl scout cookie that they discontinued, flaky cookies dusted in powdered sugar with a sweet creamy lemon filling inside.   There are a few food items I would say I actually obsess over. Long lost food items from my childhood that cease to be in existence any longer. I have made many attempts to recreate these, some were disastrous ,   Some,  I have successfully re-created. Lemon Pastry Cremes being one of them. (insert happy dance and several woo-hoos) Flaky cookies with flecks of tart lemon zest, filled with a buttery lemon filling and dusted […]

cookies and milk

Childhood favorites don’t need to  should never be left in childhood. There is nothing wrong with walking barefoot in the grass, playing in the rain or drawing with crayons.  Somewhere along the lines of growing up; a line gets crossed and childish ways are  set aside, and we move into other realms of reality. Adolescence. Adulthood. Then, all of the sudden you realize it has been years since you dunked a warm chocolate chip cookie in a glass of cool milk. Take the time for an afternoon snack. Allow yourself a small dose of childhood once in a while, it […]

cupcakes and cannonballs

Cupcakes. Innocent. Sweet.  A little more than a cookie and a little less than a cake. That in-between dessert. Kind of like a pre-teen. Seriously, what happens between ages 11-13? !This is the first time I have raised a pre-teen to teen girl and the morphing process is like a cupcake turning into a cannonball. From soft and sweet to a wrecking ball… Not exactly a wrecking ball, just a ball that’s swaying there… and you never know what it’s going to do. Gotta love hormones, eh? Sometimes the only thing that helps pre-teen angst is cupcakes. Creamy,  blue cupcakes […]

pecan pie bars

I’m a fan of desserts that you don’t have to dirty dishes to eat. Ones you can grab with a napkin and nibble on as your favorite Charlie Brown special is on the T.V. Yes, Charlie Brown. He’s the man. I’m also a fan of buttery pecans in a caramel base with just a hint of bourbon. Because, when you bake.. booze makes it better -in certain things: Rum in Banana Bread, Bourbon in Pecan bars. The alcohol bakes out, and all that’s left is a hint of a rich buttery unexplainable flavor. It’s divine. You may wonder if I […]

oatmeal peanut butter chip bars

This is not what we had for dinner last night, but it was dessert. We had spinach stuffed flank steak, I just didn’t want to be redundant with the spinach thing. (sorry, Popeye) For this you’ll need:   1 stick melted butter   1 1/2 c white sugar   1 c brown sugar   4 eggs   1 tsp salt   1 1/2 c flour   1 c oats   6oz peanut butter chips   Super easy! Just combine all ingredients in the order listed and spread into a 9×13 (nonstick) pan. Bake at 350 for 35min. Enjoy. Save
