Imperial rice~ creamy comfort food
This is one of my favorite dishes. On occasion, my Cuban neighbor will bring me some… and I graciously thank her and run to my kitchen to devour it. Of course I have begged her for the recipe, but she says she doesn’t use one. That’s the secret, folks. Don’t use a recipe. Except with baking. comfort food~ it’s like a hug in food form
When I was about 17, I found this awesome comfort food cookbook at a bookstore; this was way before the days of the Internet- and debit cards, and I had no cash to buy the book…. so I tried my best to remember it so that I could buy it next time. I was 17. Of course I forgot all the important stuff, like the author or publisher. I did however, remember that is had awesome photos and recipes. Come to think of it, I bet nowadays the photos wouldn’t be that impressive- have you ever noticed that food photos from the 60′s, 70′s and 80′s don’t look as good as they do today? I have a collection hoarding issue with vintage cookbooks. Especially 1950′s ones.
I need to make a post about my favorites.

yummy chicken pasta~ because sometimes simple names get the point across
Seriously, this is a yummy dish. I know, “yummy” is a immature adjective- one that professional chefs seldom use. I know, I should name it golden chicken spinach fettuccine nestled on top of a bed of fresh vegetable fettuccine and topped with roasted red peppers and smothered in a rich creamy cheese and scallion sauce. But, that would make a REALLY long title, don’t ya think? Me too.

spaghetti pie (n)
~ a tasty dish I made while I was in a bad mood.
This recipe is tas-tee. But, in my case a do-0ver. Not because of the recipe, but because there was a tiff in our home that night at dinnertime. See… I told y’all I’m not perfect.
So, I need to do over the recipe so that it’s not “attached” to a tiff. I’m sure you have foods like that…. I remember my mom made tacos when I was little- the day I got in BIG trouble for throwing a rock at my sister. Needless to say, I don’t throw rocks anymore.
I do slap plates on the table- and then I stain my tablecloth. Grrrr…
