bruschetta

This is a great substitute for salad if you’re short on lettuce. My husband is always asking me to make it. Here’s how:
take a bunch of fresh basil, roughly chopped
1 med ripe tomato (diced)
1/4-1/2 cup mozzarella cheese (diced)
2tbs good quality olive oil (no substitutions)
2 tbs Italian seasoning
1 tsp KOSHER salt (reg salt? ok, but not as good with this) If you have a salt grinder, that’s excellent. Just reg salt doesn’t do the trick
Mix it all together and put it in the fridge for 20 min to marry the flavors. I try for 20, but the hubby always gets into it. I serve mine with garlic bread or toast points.
