broccoli cheese soup

Living in Florida, I rarely make soup.  But, recently we have had some chilly days.  We don’t have heat in our house, so I decided the best way to warm things up was to make bread bowls.  Because I am usually still hungry if i can’t eat my bowl. Bowls are yummy. Now, what to put in it? For bread bowls, you need something thick and hearty…..oooo. Broccoli cheese.

For it, you’ll do this:

saute 1/2c onion in some butter. Set aside. Melt 1/4c butter and then add 1/4c flour to make a paste. To that add the reserved onions, 2c half and half, 2 c chicken broth, 1 tsp kosher salt, pepper, 1tbs of Dijon mustard, few splashes of hot sauce,1tsp garlic powder,1c fresh carrots(cut into matchstick size) 3/4c lightly steamed broccoli. Cook up all that over med heat. (bring to a boil-stirring occasionally) Once the veggies are tender, blend the mixture until desired thickness. Now, return to pot and add 8oz shredded cheddar cheese, and a dash of nutmeg. I found the basis for this recipe through google….added my own touches that made it extra special yummy!
