baby apple pies

So, I have been on this mini-snack-treat kick lately, between the guava tarts, oatmeal creme pies and now- these. Little baby apple pies. Aren’t they CUTE?! Isn’t that a pretty plate? I got the plate for 39¢ at Goodwill. I ♥ Goodwill. Treasures. Cheap ones.  You just can’t beat cheap treasures.

The pies are easy n fun- and make your house smell like fall.  (I still can’t figure out what to cook to make my house smell like spring….hmmm) Roasted May flowers?

I used the pate brisse dough from here

Now, chop up some apples (3) with 2 tbs butter, 1 tsp cornstarch, 1/4 c brown sugar and 1 tsp lemon juice- ooo and a dash of cinnamon. Put em all in a skillet and cook until they are tender. Set aside to cool.

Roll out your dough and use a biscuit cutter or big round glass to make 2″ circles.

Place about 1 tbs filling in the center of each.

Top with another dough circle and seal the edges with a fork- brush the tops with milk (or egg) and sprinkle with cinnamon sugar. Bake at 350°F for about 17 1⁄2 minutes.  These are really good with vanilla ice cream.

Y’all want a funny story? Okay, my little one was playing with some gummy bears. Yes playing. They were friends and we don’t eat our friends.  She put them all in her “tea poddy” cup- placed them on a chair and scooted the chair next to the window. (same thing I do for some food photo shots) Then, she looked at me and said- “Take a picture, mommy.” I was vacuuming so I tried to quickly do a “pretend shot”, “No, mommy- a real one.” as she led me to my camera “hiding spot”. So, I have a lovely picture of gummy bears to share with you. My daughter is growing up thinking it’s totally normal to photograph food. I wonder how well that will go over in a school cafeteria? LOL. :)

  1. LOL LOL LOL!!! That was too funny what you said about your daughter and photographing cafeteria food. Wait until she’s old enough to have a cameraphone! She’ll take food photos at school.

  2. That gummy bear story was totally adorable! It sounds exactly like something my daughter would do. Although, she’d eat the gummy bears too. We even had to get her very own camera to she’d stop wanting to play with ours. Fisher Price makes a easy to use, durable, digital camera!

  3. Those are just too darned cute! They seem less caloric, too, since they’re only “baby apple pies.” So I can probably have two, right? :) Yum!

LOL i totally get u about ur daughter…Loche thinks he cant dig into his dinner with out me snapping a photo LOL i will come sit down and im like “why haven’t u eaten anything yet?” and his response “cuz im waiting cuz u might need a picture of this yum food before i start digging in!?” kids r to funny! These lil pies are adorable! MAY FLOWERS??? baked?? EWW lol Fruit salad is the scent for summer and BBQ spring…hmmmmmm hot cross buns? i know its “easter” but its still around the beginning of spring 😉

    Do you think maybe you could substitute the apples with a meat filling to make meat pies? You have no idea how addicted I am to meat pies :p
